Ingredients:

  • Beef fillet 1/2 kg
  • Yogurt 100 gm
  • Papaya paste 2 to 3 tbsp
  • Fried crushed onion 1
  • Ginger garlic paste 2 tbsp
  • Mustard oil 4 tbsp
  • Turmeric powder 1/2 tsp
  • Garam masala powder 1 tsp
  • Crushed red chili 1 tbsp
  • Chickpeas powder 4 tbsp
  • White cumin 1 tsp
  • Salt to taste
  • Oil for fry

Directions:

  1. In a mixing bowl add the beef along with the yogurt, papaya paste, fried and crushed brown onions, ginger garlic paste, mustard oil, turmeric, Garam masala powder, red chili powder, chickpeas powder, white cumin and salt. Mix well and rest for 15 minutes.
  2. Now steam the beef until tender. Give it a coal smoke.
  3. Heat oil and fry meat in a frying pan for 2-3 minutes.
  4. Dish out and garnish with lemon wedges, salad leaves and onion rings
  5. Note: You can serve it without frying.

Ingredients:

  • For Pizza Dough:
  • Flour 200g (2cups)
  • Salt 1/2tsp
  • Instant yeast 1-1/2 tsp
  • Egg 1
  • Dry milk powder 1-1/2 tbsp
  • Caster sugar 1 tsp
  • Oil 3 tbsp
  • Luke warm water as required for binding
  • For Pizza Sauce:
  • Oil 2tbsp
  • Garlic paste 1/2 tsp
  • Tomato paste 1/2 cup
  • Red chilli powder 1/2 tsp
  • Salt 1/2 tsp
  • Oregano leaves 1/2 tsp
  • Ketchup 2tbsp
  • Chicken Tikka:
  • Boneless chicken 2 breast piece
  • Tikka Masala 3-4 tbsp
  • Lemon juice 2 tbsp
  • Ginger garlic paste 1/2 tsp
  •  Topping:
  • Onion 1(cube cut)
  • Capsicum 1(cube cut)
  • Tomato 1(without seeds) cube cut
  • Sweet corn 2-3 tbsp
  • Mushrooms 3-4 tbsp
  • Black olives 3-4 tbsp
  • Oregano leaves 1tsp
  • Cheddar cheese 1cup
  • Mozzarella cheese 1cup

Directions:

For dough: Take a bowl; add flour, salt, instant yeast, egg, dry milk powder, caster sugar, oil and very little water for binding.
Mix them well and keep adding little water as required to keep it soft.
The dough should be soft after mixing the ingredients.
After binding, take out the mixture and strike it on a smooth surface for 5-6 times.
Now sprinkle little flour on the same surface and roll the dough.
For thin and crispy pizza, dough should be 1/8th inch thick after rolling.
Place this rolled dough on a pizza pan and prick it with knife or fork.
Place this pan for 7-8 minutes in a preheated oven.
For pizza sauce: pour oil in a pan; add garlic paste when oil is heated and fry for 2 minutes.
Than add tomato paste, red chilli powder, salt, oregano leaves and ketchup.
Cook for 2 minutes and sauce is ready. Use this sauce when it’s cold.
For chicken Tikka: marinate chicken with Tikka Masala, lemon juice and ginger garlic paste.
Leave for 10-15 minutes and fry until chicken is ready.
At the end, place 2-3 coal pieces in a pan and cover for 4-5 minutes.
Compilation of pizza:
Roll out dough, and place in a 10inch Pizza plate.
Spread pizza sauce on dough and sprinkle cheddar cheese about 2tbsp on it.
Now spread chicken Tikka pieces on it.
Sprinkle onion, tomato, capsicum, sweet corn, mushrooms, olives, oregano leaves, Cheddar cheese and Mozzarella cheese.
Place this pan in preheated oven at 180 C for 20 minutes.
Delicious Chicken Tikka Pizza is ready.

  • For Pizza Dough:(enough for 2 pizzas)
  • All purpose flour 1/2 kg
  • Sugar 1 tbsp
  • Oil 3 tbsp
  • Egg 1
  • Instant yeast 1,1/2 tbsp
  • Salt 1/2 tsp
  • Lukewarm water or milk as needed
  • For Tandoori Chicken Topping:
  • Chicken boneless 1 kg
  • Salt 1,1/2 or to taste
  • Lemon 2 tbsp
  • Vinegar 3 tbsp
  • Yogurt 1 cup
  • Ajinomoto 1 tsp
  • Ginger garlic paste 4 tbsp
  • Oil 2-3 tbsp
  • Red chilli crushed 2 tbsp
  • Black pepper 2 tbsp
  • White pepper 1 tsp
  • Chilli sauce 1 tbsp
  • Soya sauce 2 tbsp
  • Yellow food colour 1/2 tsp
  • Coal 1 inch piece
  • For Sauce:
  • Oil 2 tbsp
  • Ketchup 1/2 cup
  • Garlic paste 1/2 tsp
  • Salt 1/2 tsp
  • Red chilli powder 1 tsp
  • Ajinomoto 1/2 tsp
  • White pepper 1/2 tsp
  • Thyme powder 1/4 tsp
  • Oregano powder 1/4 tsp
  • For Topping:
  • Tomato 2 (cut into square)
  • Lemon 1(slices)
  • Onion 1 (chopped)
  • Capsicum 2(cut into square)
  • Mozzarella cheese 1 pack (shredded)
  • Cheddar cheese 1 pack (shredded)

Directions:

  1. For Pizza Doug: Mix yeast in a little slightly warm milk and leave.
  2. Let it rise and then dissolve sugar and salt in it.
  3. Now mix all the ingredients and knead with lukewarm milk or water.
  4. When dough become in smooth form cover it with polythene bag set a side for an hour.
  5. For Pizza Sauce: Heat oil, saute garlic add rest of the ingredients in it.
  6. Cook for 2 minutes, then add 2 tbsp water and cook for 2 more minutes.
  7. Remove from heat let it cool.
  8. For Tandoori Chicken Topping: Mix all the ingredients in chicken and marinate for 1 hour.
  9. Bake at mark 4 or 180 degree for 40-45 minutes.
  10. Finish with coal smoke.
  11. When dough rise well take half of dough spread on 12'' pizza pan and mark with fork.
  12. Now spread 3 tbsp prepared sauce, top it with baked chicken, sprinkle black pepper, spread onion, tomatoes, capsicum and shredded cheese.
  13. Bake for 7-10 min at mark 7 (pre-heat oven at mark 7 for 15-20 minutes).

Ingredients:

  • Potato 2 kg
  • Oil 2 liter
  • Salt 1 tsp
  • Black pepper 1 tsp 

Directions:

  1. Wash potatoes and peel.
  2. Do not peel off the skin from ends of potatoes.
  3. Cut potatoes approximately 1/3 inch thick.
  4. Now soak potato sticks for 24 hours (that will help potato to remove extra starch from potatoes).
  5. Remove potatoes from water and pat dry them.
  6. Heat oil into heavy bottom pan and fry potatoes. (do not rush into pan, oil must be more then potatoes).
  7. Par cook the potatoes, it will take 7 minutes to turn in light brown.
  8. Take out from oil and put on strainer to drain out excess of oil.
  9. Now again fry potatoes on high flame for 2 minutes more until golden brown.
  10. Season with salt and pepper and serve hot.

Ingredients:

  • Whole leg 1 (2 to 2 2 1/2 kg)
  • Salt 6 tsp
  • Garlic paste 3 tsp
  • Sajji Masala:
  • Anardana 2 tbsp
  • Dry coriander 2 tbsp
  • Cumin 2 tsp
  • Black pepper 2 tsp
  • Cardamom seeds ½ tsp
  • Black salt ½ tsp
  • Salt ½ tsp

Directions:

  1. First of all wash the whole leg and apply salt on it very well in all directions then refrigerate it over night.
  2. Then next day dip the leg in water to rinse of the salt very well then marinate it with garlic and salt for 1 to 2 hours.
  3. Pre-heat the oven and bake it at 180 to 250 C until both sides are brown and tenderize well.
  4. For sajji masala grind all spices together.
  5. Sprinkle masala on raan and serve with naan.

Ingredients:

  • Pasanday ½ kg (lamb or beef)
  • Onion Fried 2 - 4 medium
  • Yogurt 1 ½ cup
  • Green chili 6
  • Oil ½ cup
  • All spice powder 1 tsp
  • Turmeric ½ tsp
  • Nutmeg powder ½ tsp
  • Cumin 2 tsp
  • Red chili powder 2 tsp
  • Coriander powder 2 tsp
  • Ginger garlic paste 2 tsp
  • Ginger sliced 1 tbsp
  • Sesame seeds 1 tbsp
  • Coconut 1 tbsp (desiccated)
  • Peanut 1 tbsp
  • Fresh coriander 2 tbsp
  • Salt to taste

Directions:

  1. Roast sesame seeds, desiccated coconut, peanut and cumin.
  2. Marinate pasanday with roasted mixture.
  3. Also add turmeric, red chili powder, coriander powder, ginger garlic paste, fried onion, yogurt, all spice powder, nutmeg and salt.
  4. Now heat oil in a pan, add marinated pasanday, cover and cook on low flame till meat tender.
  5. When oil forms a layer add green chilies.
  6. Garnish with sliced ginger.

Ingredients:

  • Beef under cut 1/2 kg (sliced)
  • Salt 1 tsp
  • Chicken powder 2 tsp
  • Black pepper 1 tsp
  • Red color pinch
  • Corn flour 1 tbsp
  • Egg 1/2 (beaten)
  • Oil 1/4 cup
  • Garlic paste 1 tsp
  • Oyster sauce 2 tbsp
  • Dark soy sauce 1 tbsp
  • Crushed black pepper 1/2 tsp
  • Onion 1 (julienne)
  • Capsicum 1 (julienne)
  • Spring onion 1 (cut into 1 inch pieces)

Directions:

  1. Marinate beef undercut with salt, 1 tsp chicken powder, black pepper, red color, corn flour, 2 tbsp water, half beaten egg and keep for 20 minutes.
  2. Heat 2 tbsp oil in a pan and stir fry beef until soft. Remove and keep aside.
  3. In a wok add remaining oil put garlic paste with oyster sauce, soy sauce, crushed black pepper, 1 tsp chicken powder, onion, capsicum and fried beef. Toss all well.
  4. Lastly add green onion and remove.

Ingredients:

  • Lamb leg piece 1 kg weight
  • Oil 4 tsp
  • Yogurt ¼ cup
  • Papaya paste 4 tbsp
  • Lemon juice 2 tbsp
  • Green chilies 2 tbsp (chopped)
  • Crushed red chili 1 tbsp
  • Ginger garlic paste 2 tsp
  • Salt to taste
  • Chaat masala 1 tsp
  • Garam masala 1 tsp
  • Roasted cumin 1 tsp

Directions:

  1. Mix all above ingredients in a mixing bowl.
  2. Wash and make cut on lamb and rub marination on lamb. Leave it overnight.
  3. Place lamb on baking tray and cover with aluminum foil.
  4. Bake at 180 degree for one and half hour. Then uncover and bake for 15 minutes or until tender.
